Summer is peaking and tomatoes are bursting off their vines.  I love the smell of a ripe tomato that’s been sitting in the sun.  Just cut me a wedge, sprinkle with some sea salt or dip in a bit of homemade vinaigrette and I am happier than a puppy getting his belly rubbed.  Funny thing is that I hated raw tomatoes until I was nearly sixteen.  All that joy I was missing.  Luckily my taste buds grew up! Fruity Oat Cake – Bananas, apples and raisins, OH MY!

I threw this cake together with what I had leftover in my fruit bowl and some cupboard staples.  Moist, sweet but not too sweet and packed with soft fruits.  This is one of the dishes I’m the proudest of because it was DELICIOUS, simple and helped use up some still useful but nearly overripe fruit.  I hate waste.  Get on this! I know it looks too healthy but I swear it tastes fantastic, like an oatmeal cookie jazzed up and turned into a great cake.  Serve with tea for added sophistication.

Homemade Buttermilk Pancakes

Don’t get me wrong, food doesn’t always have to be scratchmade especially with amazingly convenient pancake mixes. However, when you are craving pancakes and you’ve run out of pancake mix (which is exactly what happened to me) this recipe will save you. This is the best scratchmade pancake recipe I have found and I think that is due to the use of self-rising flour and baking soda that makes the hotcakes so fluffy. Serve up with some yummy Easy Blueberry Syrup and you’ll be in heaven.
